Characteristics: anchovies fished in the Cantabrian Sea (Engraulis Encrasicolus), particularly in the Santona area.
They are large, with a consistent flesh, rosé coloured and tasty. These anchovies are still carefully processed by hand: from the stage of preparation for salting, up to the de-boning and final laying in tin stage.
Uses: ready for use for appetizers (often eaten with butter), pasta
dishes and as a refined addition to salads, pizzas and bruschettas.
