Smoked pork ribs with potatoes

For 6 persons.

Remove the pork ribs from the bag and brush them with barbecue sauce, then bake them in the oven at 200°C for 20 minutes until they are golden brown. In the meantime strain the preserving liquid from the potatoes, cut them into quarters and dress them with the extra virgin olive oil and the Profumoro. Put them into an oven dish and bake at 220°C for about 20 minutes. Cut the ribs into pieces following the bone and serve with the roast potatoes.
