Bell pepper of Senise PGI, is a sweet and delicate pepper characterised by a thin pulp and low water content. Harvested manually from July to October, the pepper is dried naturally and gently fried. Crunchy, sweet and tasty, Crusco peppers can be eaten as a snack or used to enrich appetisers. They are also perfect crumbled on first and second courses, or for garnishing gourmet pizzas and sandwiches. For an original combination, try pairing them with cocoa and chocolate. In the tradition of Lucania, they are often served with salted codfish, for a unique contrast of flavours.
