Preparation:
1. Pull the Stinchetto meat off the bone in bite size pieces.
2. Cut the cherry tomatoes into quarters.
3. Make a mixed salad with Borlotti beans, Cipolline baby onions and rocket.
4. Season with oil, salt and pepper.
5. Top with the pork and serve.
