Salted cod is one of the most famous ingredients of the Italian cuisine and is combined and embellished with other elements to form part of many traditional regional dishes. As with the rest of the Evolution fish range, attention is focused on the quality of the raw material obtained from the salting of high quality Atlantic cod, expertly and patiently doused to soften it while preserving the pleasant firmness typical of the product. It comes in cubes, with the skin removed, in a white sauce consisting of the salted cod cooking water, extra virgin olive oil and herbs.
Thanks to Evolution technology this new product is aromatic and light in colour, and can be served as it is with polenta, beaten together to make creamed salted cod, as a condiment for pasta dishes and, thanks to its simple recipe, also embellished with other ingredients to make typical regional dishes.
